Super Easy Seed Crackers

These crackers are super easy to make, healthy and delicious! All of the ingredients can be purchases at a bulk store. Here’s how to make them.
Ingredients:
1/2 cup pumpkin (pepita) seeds
1/2 cup sunflower seeds
1/2 cup sesame seeds
1/2 cup chia seeds
250 mL (1 cup) of water
1/2 teaspoon of salt
Instructions:
Preheat the oven to 300ºF. Line a large baking sheet with parchment paper. I use a 9x13 baking sheet, and the crackers come out at the right thickness.
In a bowl, combine all of the seeds. Add the salt and water.
Mix until combined, and let it sit until all the water is absorbed (about 5 minutes). Mix again thoroughly.
Use a spatula to spread the mix evenly onto the baking sheet. I drop a spatula full of mix here and there over the baking sheet so it’s easier to spread evenly.
Bake for 60 minutes.
Remove from the oven, and carefully lift the parchment paper and cracker mix onto a cutting board.
Score the cracker mix into rectangles however large you’d like them (I take a large knife and press it into the mix, being careful not to press so hard that I cut through the parchment)
Carefully lift the crackers back onto the pan. I don’t bother to flip them over.
Bake for another 60 minutes.
Take them out, let them cool on the pan.
Once cooled, put the crackers into a reusable container and put the parchment paper in the compost bin.

NOTE: I store my crackers on the counter in a container with the lid on but not sealed tightly shut. I find if they are sealed shut, the crackers get soft. You an also freeze the crackers and save for later.
